Chocolate is always my first choice of dessert, be it ice cream, cakes, macarons, etc. I have always been fascinated by some restaurants which have my all-time favorite dessert – molton chocolate lava cake, in their dessert menus. This cake is the equivalent of soufflés – nemesis of most chefs. The temperature and baking time of the chocolate lava cake got to be perfect. If the oven is too hot, the cake will be hard and crunchy, or worse, burned. If the cake is left in the oven for 30 seconds or a minute longer, it will be a solid chocolate cake instead of a chocolate lava cake with molten chocolate in the middle.
Before putting my resources into making this devilish cake, I watched several YouTube videos where several individuals demonstrated their takes on the chocolate lava cake. I also googled for what I think was the best recipe to make the cake. After spending much time in front of my laptop, I settled for the recipe which raved many good reviews, hoping that I would attain success in one try.
To my dismal, the recipe did not work out for me. My first try was a disaster. My cakes were over-done, i.e. I baked a solid chocolate cake instead. I attributed my failure to my greed of leaving the cakes in the oven for a minute longer. The recipe stated to leave the cakes in the oven for about 8-12 minutes. The 4 minutes difference was too big, and I left my cakes in the oven for 10 minutes. I thought I had figured out where I did wrong so I gave the same recipe a second try. It did not turn out well too. This time, my cakes were under-cooked. To my frustration, I decided to try another recipe instead.
And I DID IT! The chocolate lava cake turned out just what I wanted. Soft cake with chocolate oozing out from the center of the cake and none of the cakes were burned. The only thing I would change in the recipe is the amount of sugar. The guide was half cup sugar but personally I think that the sugar could be lessen as my cakes turned out to be a little too sweet for my liking. The recipe stated to bake the cakes for about 8-10 minutes but I baked mine for 8 minutes, and they turned out perfect.
